This week’s “Muffin Tin Monday” challenge was “rainbow.” I was worried I didn’t have enough in my kitchen yesterday to pull it off, but with a little searching and imagination, I came up with this.
(Can you spot the unhealthy option? G squealed when he saw it.)

Rainbow muffin tin

(I filled two of the muffin cups each with blueberries and grapes; they’re my kids’ favorite!)

I only made one mini muffin tin for them to share, since I was excited about our lunch main dish, Veggie Pigs in a Blanket with homemade honey-dijon dipping sauce. I think Ken and I enjoyed them more than they did, though.

that is a beautiful muffin tin that you did - keep wondering how Walker would like something like that…unfortunately he’s in a fairly picky stage…might be a lot of work for naught! :)
