For those of you who haven’t heard Ken’s latest rants on “what’s new” with him, he is now a tea snob. Well, maybe not as much of a coffee snob as he once was….but he is experimenting with the idea of drinking tea. Not Southern-sweet iced tea, mind you….but hot tea. And not just boring ol’ chamomile, either….but green teas, chai teas, rosehips teas, and organic tea varieties.
He has grabbed ahold of me and hoisted me aboard this so-called “tea train,” as well. I am game, especially if it has health benefits (which it certainly does).
Who else should come on board, but our 2-year-old boy, as well. After having him tugging at our waistbands whenever we stood to enjoy our tea in the mornings, pleading for a sip, we decided it wouldn’t be bad for him, so why not? So, this morning, I brewed him a cup of caffeine-free (naturally) apple-cinnamon-rosehips tea, and he was more than delighted. See him here, enjoying his cup ever so gingerly, smiling even wider because his mommy added a teaspoon of honey to make it sweeter.

Last night, even though I shouldn’t have, I took it upon myself to break out a recipe I’ve been wanting to try, Mississippi Tea Cakes. It is just a fancy way of saying “buttermilk sugar cookies that are extraordinarily good with a cup of tea,” but still. I just had to.

Here is the recipe for you, just in case you’re a tea lover as we are fast becoming, and need just a little something to sit alongside your cup and saucer on a lovely spring morning. Enjoy.
Mississippi Tea Cakes
1/2 cup butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract (or 1/2 t. vanilla and 1/2 t. almond extract)
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup low-fat buttermilk
Preheat oven to 350 degrees and lightly grease a cookie sheet.
In a mixing bowl, cream together the butter and sugar till light and fluffy. Add the egg and extract(s); mix well. Combine the flour, baking powder, and baking soda in a small bowl. Add to creamed mixture alternately with buttermilk. Scoop out into 2 t. portions and place 2″ apart on greased sheet. Bake 9-11 minutes, or just till barely golden around the edges. Let cool on pan for 2 minutes, then remove and cool completely on racks. Makes about 2 dozen.

His hair is standing up. And that’s not from caffeine, either. You may think hair gel, but you’d be wrong. It’s from Garnier “sculpting hair putty / wax,” I do believe. And I do, because I put it there.

Those cookies look amazing! I love a simple sugar cookie with my tea! And I like milk in my tea too!
